Dark Chocolate Peanut Butter Balls

Ingredients
1 cup peanut butter
1 cup almond flour
1/3 cup honey
1 teaspoon vanilla
3/4 cup chocolate chips

Directions
1) Mix together peanut butter, almond flour, honey, and vanilla until mixture thickens and sticks together.
2) Roll the mixture into balls.
3) Melt the chocolate chips in the microwave 15 seconds at a time.
4) Dip the balls into the melted chocolate.
5) Place ball on parchment paper and refrigerate at least one hour.

Ingredients
1/2 cup coconut flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1/3 cup melted butter

1-1.5 tablespoons honey or maple sugar or 2 tablespoons sugar
1/2 teaspoon vanilla

1) Mix ingredients together.
2) Cook 8 tiny cookies at 350 degrees for 8 minutes.

Almond Flour German Pancakes

Ingredients
2 tablespoons butter
1/3 cup almond flour
1/3 cup milk
1/4 teaspoon salt

3 eggs
cinnamon

Directions
1) Preheat oven to 400 degrees.
2) Put butter in 8x8 pan and let it melt in oven.
3) Whisk together flour, milk and salt.
4) Whisk in eggs.
5) Once butter is melted, remove from oven, tilt pan to coat bottom of pan.
6) Pour egg mixture into pan and top sprinkle with cinnamon.
7) Bake for 15 minutes.


Almond Flour Crepes

Ingredients
5 eggs
1/2 cup almond flour
2 tablespoons cornstarch
2 teaspoon honey
1 teaspoon vanilla
1/8 teaspoon salt

Directions
1) Whisk the eggs.
2) Add flour, cornstarch, honey, vanilla, and salt and mix well.
3) You are done stirring when there are no lumps in the batter; it should have a similar consistency to thickened milk.
4) Heat pan hot enough that water will sizzle if you flick drops on it. Spray with cooking spray.
5) Pour about 1/4 cup batter onto the pan and tilt and swirl until it is flat.
6) Flip when the top is shiny.

3 tsp. Vanilla extract
3 cups blanched almond flour
1/4 cup coconut flour

1 cup chocolate chips

Directions
1) Mix together applesauce, honey, vanilla, and eggs until smooth.
2) Add almond flour, coconut flour, baking soda and salt and mix until well combined.
3) Fold chocolate chips into dough.
4) Scoop out small spoonfuls and roll into balls.
5) Place on parchment paper on baking sheet.
6) Bake at 350 degrees for 10-12 minutes.

4-6 tablespoons coconut or almond flour

Directions
1) Mash bananas
2) Add baking powder and vanilla.
3) Whisk to mash until thoroughly combined.
4) Add eggs. Whisk until well combined.
5) Add coconut flour 1 tablespoon at a time until a thick but scoopable batter is achieved.
6) Add oil to hot skillet.
7) Cook pancake over low heat and cover with a lid for about 3-4 minutes each side.

1) Place butter and chocolate chips in a microwavable bowl. Microwave for 1 minute. Whisk together until fully melted.
2) In a separate bowl, whisk together the almond flour, cocoa powder, baking powder and salt.
3) In another bowl, whisk together the eggs, sugar and vanilla.
4) Whisk the cooled chocolate and butter mixture into the egg and sugar mixture until combined.
5) Mix dry ingredients and wet ingredients together.
6) Butter an 8x8 inch pan and pour batter into it.
7) Bake at 350 degrees for about 25 minutes.
