Crockpot Applesauce

Baked Apples

Ingredients
1 tablespoon butter
2 apples
1 tablespoon brown sugar
pinch of cinnamon
pinch of salt

Directions
1) Melt butter over medium heat
2) Chop apples
3) Cook apples with pinch of salt for 2-3 minutes
4) Add brown sugar and cook for 2-3 more minutes stirring often so sugar doesn't burn


Roasted Vegetables

Roasted Vegetables with Olive Oil, Salt, and Pepper

Asparagus : 425 degrees, 10-20 minutes (parmesan cheese, butter)
Broccoli : 400 degrees, 20-25 minutes (garlic) or 10 min from frozen then olive oil and salt and roast 10 more minutes. Add parmesan for 2 more minutes.
Carrots : 400 degrees, 25-30 minutes (honey)
Cauliflower : 400 degrees, 20-25 minutes
Green Beans : 425 degrees, 10-12 minutes  (butter)
Potatoes : 425 degrees, 30-35 minutes (ranch seasoning)
Sweet Potatoes : 425 degrees, 30-35 minutes
Squash : 475 degrees, 20-25 minutes
Zucchini : 475 degrees, 20-25 minutes


Brussels sprouts and Butternut Squash with Bacon


Bacon in the oven


Sweet Potato and Bacon Hash

Ingredients
Olive Oil, for the pan
1 1/2 pounds sweet potatoes, peeled and cut into 1/2 inch cubes
12 ounces bacon
pinch of cinnamon
salt
pepper

Directions
1) Grease pan with olive oil.
2) Lay cubed sweet potatoes on pan in an even layer.
3) Roast at 375 degrees until just tender, about 10 minutes.
4) Cook bacon on medium heat on stove.
5) Remove bacon from pan.
6) Add sweet potatoes to bacon pan and cook on medium high.
7) Fry until crispy and golden brown, about 7 minutes.
8) Add bacon to the pan and fold to combine.


Slow Cooker Sweet Potatoes

Ingredients
4 medium sweet potatoes

Directions
1) Wash and dry the sweet potatoes
2) Pierce sweet potatoes multiple times with fork
3) Place in slow cooker.
4) Cook on high for 3-4 hours


Broccoli Salad

Ingredients
2 stocks broccoli
1 half red onion, chopped
shredded cheese
dried cranberries
bacon bits
sunflower seeds
poppyseed dressing
mayonnaise

Directions
1) Drop broccoli in boiling water for about 20 seconds.
2) Chop broccoli into small pieces.
3) Mix broccoli, onion, cheese, cranberries, bacon bits, and sunflower seeds together.
4) Mix poppyseed dressing, mayonnaise, and water to create a dressing.
5) Mix broccoli salad with dressing.



Potatoes

Ingredients
potatoes
butter and/or olive oil
onion
pepper

Directions
1) Peel and chop potatoes
2) Chop onion and pepper
3) Heat butter and/or olive oil over medium heat.
4) Cook potatoes, onion and pepper until potatoes are soft.



Roasted Ranch Potatoes

Ingredients
1/4 cup vegetable oil
2 teaspoons Ranch seasoning
2 pounds potatoes

Directions
1) Cut potatoes into bit sized pieces
2) Place potatoes in gallon sized container
3) Add oil to container and shake to cover potatoes
4) Add Ranch seasoning and toss again until coated.
5) Bake at 400 degrees for 30-35 minutes.



Baked Spaghetti Squash

Ingredients
Spaghetti Squash

Directions
1) Preheat oven to 350 or 400 degrees.
2) Pierce spaghetti squash several times with fork.
3) Bake for 1 hour.


Baked Sweet Potatoes

Ingredients
Sweet potatoes

Directions
1) Preheat oven to 400 degrees.
2) Pierce each sweet potato several times with fork.
3) Wrap each sweet potato with foil.
4) Bake about 45 minutes - 1 hour.
5) Top with butter or cinnamon.


Chicken Salad

Ingredients
2 (12 oz) cans cooked chicken
4 celery stalks, chopped
1.5 cups dried cranberries
1 cup walnuts
dash of lemon juice
mayonnaise, to taste

Directions
Mix all ingredients together. Chill before serving.


Spanish Rice

Ingredients (6 servings)
1/4 cup vegetable oil
1 1/2 cups uncooked rice
1 cup salsa
1 chicken or beef bouillon cube
2 cups water

Instructions
1) Heat oil in large skillet; when hot add rice, stir and cook rice until it turns opaque white.
2) Add salsa, bouillon cube, and water; stir. 
3) Bring to a boil. Cover, lower heat to low, and cook for 25 minutes, until liquid has been absorbed.


Apple Walnut Salad

Ingredients
Apples
Lemon juice
Celery
Raisins
Mayonnaise
Walnuts

Directions
Mix ingredients to taste.
