Chocolate Peanut Butter Pie
Ingredients
2 or 4 8-inch pie crusts
5 cups blueberries
3/4 cup sugar
3 tablespoons cornstarch
1/2 teaspoon cinnamon
1 teaspoon lemon juice
Directions
1) Mix blueberries, sugar, cornstarch, cinnamon, and lemon juice in a bowl.
2) Preheat oven to 400 degrees.
3) On parchment paper, roll out 1 or 2 stacked pie crusts to 13 x 9 inches.
4) Roll out another 1 or 2 stacked pie crusts and place in 13 x 9 inch pan.
5) Spread out blueberry mixture onto crust.
6) Place other crust on top and tuck in edges.
7) Bake for 35 minutes.
Apple Pie
Ingredients
1/2 cup sugar
1/2 cup brown sugar
3 tablespoons flour
1 teaspoon cinnamon
1/4 teaspoon nutmeg
6 or 7 apples peeled and thinly sliced
1 tablespoon lemon juice
Pastry for double pie crust
1 tablespoon butter
Directions
1) In a small bowl, combine the sugars, flour and spices.
2) In a large bowl, toss apples with lemon juice. Add sugar mixture and mix well.
3) Line pie plate with bottom crust.
4) Add apple mixture. Dot with butter.
5) Roll out top pastry. Place over filling. Seal edges. Cut slits in top.
6) Bake at 375 degrees for 45-55 minutes or until crust is golden brown and filling is bubbly.
