Ingredients
4 cups cooked rice
2 large carrots, shredded
3/4 cup frozen peas, thawed
2 cloves garlic
1 tablespoons finely grated ginger
1/4 cup vegetable oil
1/4 cup soy sauce
3 tablespoon apple cider vinegar
1 tablespoons sesame oil
3 large eggs, beaten
Directions
1) Mix all ingredients except eggs.
2) Spread on sheet pan.
3) Bake at 475 for 15 minutes.
4) Toss the rice on sheet pan.
5) Drizzle eggs over the rice.
6) Bake for 5-10 more minutes until eggs are cooked through.
Island-Style Fried Rice

Ingredients
1.5 cups uncooked jasmine rice
3 cups water
8 eggs, beaten
8 egg whites
1 tablespoon olive oil

Directions
1) Bring rice and water to a boil in a saucepan over high heat.
2) Reduce heat to medium-low, cover, and simmer until the rice is tender, and the liquid has been absorbed, 20 to 25 minutes. Let the rice cool completely.
3) Scramble eggs.
4) Cook vegetables in oil in skillet. Cook meat.

1 (15 oz) can black beans, rinsed and drained
1.5 cup corn
4 green onions, white and green parts thinly sliced
1 red pepper
1/4 cup minced fresh cilantro
Dressing
1/3 cup extra-virgin olive oil
1/4 cup red wine vinegar
1 tablespoon sugar
1 garlic clove, minced
1 teaspoon salt
1 teaspoon ground cumin
1 teaspoon chili powder
1/4 teaspoon black pepper
Directions
1) In a large bowl, combine all of the salad ingredients and toss.
2) In a small bowl, whisk together the dressing ingredients and pour over the salad. Toss to coat. Chill the salad for at least 2 hours beforehand to let the flavors blend.
