M&M Chocolate Chip Cookie Bars
Easy Peanut Butter Bars
Ingredients
Bars
1 cup sugar
1 cup butter, softened
1 cup brown sugar
1 teaspoon vanilla extract
2 large eggs
2 1/2 cups peanut butter
2 cups oats
2 cups flour
1 teaspoon baking soda
1 teaspoon salt
Frosting
1/2 cup butter, softened
1/4 cup milk
2 teaspoon vanilla
4 tablespoon cocoa
2-3 cups powdered sugar
Directions
1) In a large bowl, cream butter, sugar and brown sugar.
2) Add vanilla, eggs, and 1 cup peanut butter. Stir to combine.
3) Add oats, flour, baking soda and salt and mix until well combined.
4) Grease cookie sheet. Spread out dough evenly on a baking sheet.
5) Bake at 350 degrees for 15 minutes.
6) Drop 1.5 cups peanut butter by spoonfuls on top of warm bars and spread as it starts to melt.
7) Once cooled, top with chocolate frosting.
Reese's Chocolate-Filled Bars
4 dozen bars
Ingredients
2.5 cups all-purpose flour
2.5 cups oats
1 teaspoon baking soda
1/2 teaspoon salt
1 cup butter
1/2 cup peanut butter
2 cups brown sugar
2 eggs
2.5 teaspoons vanilla extract
2/3 cup cocoa
1/4 sugar
1 can (14 oz) sweetened condensed milk
1.25 cups Reese's candy
Directions
1) Heat oven to 350 degrees
2) Stir flour, oats, baking soda and salt.
3) Beat 1/2 cup butter, peanut butter and brown sugar until well blended in large bowl.
4) Add eggs and 1 teaspoon vanilla. Beat until light and fluffy.
5) With spoon, gradually add flour mixture.
6) Remove 2 cups dough. Press remaining dough onto bottom of 15x10 pan.
7) Melt remaining 1/2 cup butter in medium saucepan over low heat.
8) Stir in cocoa and granulated sugar.
9) Add sweetened condensed milk; cook, stirring constantly, until smooth and thick.
10) Remove from heat; stir in remaining 1.5 teaspoons vanilla.
11) Spread mixture evenly over dough.
12) Sprinkle top with peanut butter baking bits.
13) Crumble reserved dough evenly over chocolate and baking bits.
14) Bake 25-30 minutes until top is golden brown (chocolate will be soft).
Peanut Butter Bars
Ingredients
1.5 cups confectioners' sugar
1.5 cups graham cracker crumbs
1 cup peanut butter
salt
1 stick butter, melted
1 cup chocolate chips
1 cup heavy cream
Directions
1) Spray 8x8 pan with spray
2) In large bowl, stir to combine confectioners' sugar, graham cracker crumbs, peanut butter, 1/8 teaspoon salt, and melted butter.
3) Press mixture into baking dish.
4) Place chocolate and 1/8 teaspoon salt in medium bowl.
5) Heat cream in a small saucepan until bubbles start to foam around edges. This happens very quickly. Then quickly pour cream over chocolate.
6) Let sit for 1 minute and then whisk until completely melted and smooth.
7) Pour the chocolate ganache over the peanut butter mixture and refrigerate until the chocolate is cooled and set, at least 45 minutes or overnight.
Chocolate Chip Cream Cheese Bars
Ingredients
Cookie Mix
2 1/4 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
2 sticks butter, softened
3/4 cup sugar
3/4 cup brown sugar
1 teaspoon vanilla extract
2 eggs
2 cups chocolate chips
Cream Cheese Mixture
8 oz package cream cheese
1/4 cup sugar
1/2 teaspoon vanilla extract
1 egg
Directions
1) Preheat oven to 350 degrees. Grease 9x9 inch baking dish.
2) Stir flour, baking soda and salt in bowl.
3) Beat butter, 3/4 cup sugar and brown sugar at medium speed until creamy.
4) Add 1 teaspoon vanilla extract and 2 eggs, one at a time on low speed; mixing just until incorporated.
5) Gradually add dry mixture to creamed mixture. Stir in chocolate chips.
6) In small bowl, beat cream cheese and 1/4 sugar until smooth and creamy.
7) Add 1 egg and 1/2 teaspoon of vanilla extract and mix on low until just incorporated.
8) Pat 2/3's of the cookie dough evenly into the baking dish. Spread cream cheese mixture over evenly. Drop the rest of the cookie dough over the cream cheese mixture.
9) Bake for 40-45 minutes.
