Big Mac Tacos (4 servings)

Ingredients
Special Sauce
1/4 cup mayo
2 tbsp ketchup
1 tbsp dill pickle mustard

Tacos
8 mini flour tortillas
1 lb 85/15 ground beef
salt and pepper
8 slices cheese

Toppings
Shredded lettuce
Tomatoes
Special sauce

Directions
1) Whisk the sauce in a small bowl.
2) Spread meat evenly between the 8 tortillas and season with salt and pepper.
3) Place meat side down on a skillet heated over high heat.
4) Cook for 1/2 minutes, then flip, top with cheese, cover, and cook for another 1-2 minutes. 
5) Add toppings and enjoy.

Ingredients
1 lb ground beef
1 onion
1 can (15 oz) pinto beans
1 can (15 oz) corn
2 cans (15 oz) diced tomatoes with green chilies (Rotel)
1 cup uncooked rice

Directions
1) Cook rice.
2) Cook ground beef.
3) Add onion.
4) Add beans, corn, diced tomatoes.
5) Mix in rice.
6) Serve with cheese and sour cream.


Shepherd's Pie

Ingredients
2 lb ground beef
1 bag (12 oz) frozen mixed vegetables
1 packet Lipton's Onion Soup mix
1/2 cup beef flavored broth or water
3 cups (10 servings) mashed potatoes
shredded cheese

Directions
1) Heat oven to 375 degrees. Spray baking dish with cooking spray.
2) Cook beef, stirring occasionally. Drain.
3) Reduce heat to medium. Add frozen vegetables, onion soup mix. Cook 4 to 5 minutes, stirring frequently, until thoroughly heated.
4) Add broth mixture to beef mixture. Cook 2 to 3 minutes, stirring occasionally, until thickened. Spoon beef mixture into baking dish.
5) Sprinkle shredded cheese over beef mixture.
6) Cook mashed potatoes as directed. Spread evenly over beef mixture.
7) Spring more shredded cheese on top.
8) Bake 20 to 25 minutes or until heated through.


Taco Ring

Ingredients
1 lb ground beef
1 package (1 oz) taco seasoning mix
1 cup shredded cheddar cheese
2 cans (8 oz) crescent rolls
Lettuce, tomatoes, salsa if desired

Instructions
1) Cook beef. Add taco seasoning and 1/2 cup water. Simmer 3 or 4 minutes until slightly thickened. Mix beef mixture and cheese.
2)Unroll both cans of dough. Separate into 16 triangles. On ungreased pizza pan, arrange triangles in ring so short sides of triangles form a 5-inch circle in center. Dough will overlap. Dough ring should look like sun.
3) Spoon beef mixture on half of each triangle closest to center of ring.
4) Bring each dough triangle up over filling, tucking dough under bottom layer of dough to secure.
5) Bake at 375 degrees for 20 to 25 minutes or until dough is golden brown and thoroughly baked.


Tater Tot Casserole

Ingredients
20-26 oz cream of chicken
1/2-1 cup of sour cream
Lots of cheese
1 lb ground beef
Chopped onion, or some onion soup mix
Garlic clove or garlic powder
1lb / 16 oz Tater tots

Instructions
Mix cream of chicken, sour cream and cheese.
Cook beef with onion and garlic and whatever other seasonings.
Mix everything in 13x9 casserole dish.
Add tater tots and more cheese on top.
Cook at 375 degrees for about 45 minutes or until tater tots are golden brown.

Meatloaf

Ingredients (Loaf):
2 lbs Beef
1 pkg Lipton Onion Soup Mix or Beef Onion Soup Mix
3/4 cups Oats
2 eggs
3/4 cup water
1 cup Ketchup
2 tbsp Mustard
2 tbsp Brown sugar
1 tbsp Worcestershire sauce

Ingredients (Sauce on top)
1/2 cup Ketchup
1 tbsp Mustard
1 tbsp Brown Sugar
1/2 tbsp Worcestershire Sauce

Directions:
Mix loaf ingredients together. Put in pan. Mix extra sauce ingredients together and spread on top. Cook at 350 for 1 hour.



Sloppy Joe Casserole

Ingredients
1 1/2 lbs. ground beef
1 onion
1 (28 oz.) can sloppy joe sauce
2 cups shredded cheese
1 can biscuits

Directions
1) Cook ground beef and onion. Drain.
2) Stir in sloppy joe sauce.
3) Spray 9x13 baking dish.
4) Pour sloppy joe mixture into dish.
5) Sprinkle with cheese.
6) Flatten biscuits and lay on top of cheese
7) Bake at 400 degrees for 20 minutes or until golden brown.
