Ingredients
Cake
2 cups cake flour
1 cup sugar
2 1/2 teaspoons baking soda
1 teaspoon salt
1/4 cup cocoa powder
1 cup mayonnaise or miracle whip
1 teaspoon vanilla
1 cup water
Chocolate Frosting
1/4 cup cocoa powder
2 cups powdered sugar
1 stick of butter
1 teaspoon vanilla
milk
Directions
1) Mix cake flour, sugar, baking soda, salt, and cocoa powder.
2) Mix mayonnaise, vanilla, and water.
3) Mix wet ingredients into dry ingredients with beater.
4) Spray 13x9-inch or two 8-inch pans.
5) Sprinkle pan with flour.
6) Bake at 325 degrees for 10-20 minutes.
7) Mix frosting ingredients.
8) Add milk until spreading consistency is reached.
Cake Balls
Ingredients
1 box cake mix
eggs, oil, and water as called for on cake mix box
1 cup frosting
1 lb candy melts
sprinkles (optional)
Directions
1) Bake cake as directed
2) Let cake cool completely, then break apart and crumble until fine crumbs form
3) Stir in frosting until a dough forms. Add more frosting if it seems dry.
4) Roll cake mixture into tablespoon sized balls and place on parchment paper. Chill for at least 1 hour.
5) Melt candy melts in bowl in microwave 30 seconds at a time and stir until completely smooth.
6) Place each ball on a fork and use a spoon to pour candy melts over the cake ball. Remove excess candy melts.
7) Please each ball on parchment lined sheet pan. Top with sprinkles.
8) Store in refrigerator.
Banana Cupcakes
Ingredients
2 1/4 cups cake flour
1 2/3 cups sugar
1 1/4 teaspoons baking soda
1 teaspoon salt
2/3 cup shortening
2/3 cup buttermilk
3 eggs
1 1/2 cups mashed ripe bananas
Directions
1) Preheat oven to 350F. Line cupcake tins with liners or spray.
2) Pour all ingredients into large bowl.
3) Blend for 30 seconds on low, scraping down sides of bowl.
4) Beat for 3 minutes on high speed.
5) Pour batter into cupcake tins about 2/3 full.
6) Bake 20-25 minutes.
