Pantry Cocoa Brownies
Ingredients
2/3 cup vegetable oil
2/3 cup natural unsweetened cocoa powder
1/2 cup all-purpose flour
1/4 teaspoon baking powder
1/2 teaspoon salt
3 eggs
1 1/3 cups powdered sugar
2/3 cup brown sugar
1 teaspoon vanilla extract
Directions
1) Cover a 9x9-inch baking pan with parchment paper and grease.
2) Microwave oil for 30 seconds until warm but not hot.
3) Add the cocoa powder and whisk until smooth and combined.
4) Place flour, baking powder, and salt in a small bowl and whisk to combine.
5) Place eggs, powdered sugar, brown sugar in a large bowl and beat until fluffy.
6) Beat in vanilla until just combined.
7) Add 1/2 cocoa mixture to the egg mixture and mix at medium-high speed until shiny and fully combined.
8) Add the flour mixture to the egg and cocoa mixture and mix at low speed until fully combined.
9) Add the remaining cocoa mixture and mix at medium-high speed until shiny and fully combined.
10) Spread batter into an even layer.
11) Bake at 325 for 20 minutes.

Ingredients
1 cup unsalted butter
1 1/2 cups chocolate chips
1 1/2 cups sugar
3/4 cups brown sugar
1 tablespoons vanilla extract

1) Add butter and 1 cup of chocolate chips to a large microwaveable bowl.
2) Microwave for 90 seconds, then let sit for 3 minutes before whisking together.
3) Add the sugar, brown sugar, vanilla, and salt. Whisk to combine.
4) Whisk in the eggs until fully combined.
5) Fold in flour and cocoa powder.
6) Fold in last 1/2 cup of chocolate chips.
7) Line a 9-inch square baking pan with parchment paper and grease.

Oreo Cream Filled Brownies
Makes 20 brownies
Ingredients:
Brownie
¾ cup semisweet chocolate chips
½ cup butter, cut into cubes
1 tsp vanilla
2 eggs
1 cup granulated sugar
1 tsp salt
¾ cup flour
Filling
½ cup vegetable shortening or butter, room temperature
1 tsp granulated sugar
3½ cups powdered sugar
½ tsp vanilla
3 Tbsp hot water
Directions:
Brownie
1. Preheat oven to 400°. Spray a 10x15 sized pan with non stick spray. Line bottom with parchment paper and spray parchment with nonstick spray. Set aside.
2. In medium microwave safe bowl combine cubed butter and chocolate chips. Heat on high for 1 minute in microwave and stir until smooth. Add in vanilla and stir. Set aside.
3. In bowl of stand mixer beat eggs and sugar until pale in color. Add in flour and salt and mix on low until combined. Pour in melted chocolate mixture and stir until incorporated.
4. Spread batter evenly into prepared pan and bake for 810 minutes until center is set. Allow pan to cool completely on a wire rack before filling.
Filling
1. Combine all filling ingredients into a mixing bowl and beat until smooth.
Assembly
1. Loosen edges of the brownie from the sides of the pan with a butter knife. Invert pan onto a cutting board, releasing the brownie from the pan. Cut brownie in half with a knife.
2. Spread filling on the bottom side of one of the halves. Place the other half of the brownie directly on top. Cut into squares. Notes store airtight at room temperature for 3 days

Peanut Butter Truffle Brownies
Ingredients
Brownie base:
1 box (1 lb 6.25 oz) brownie mix
Filling:
1/2 cup butter, softened
1/2 cup creamy peanut butter
2 cups powdered sugar
2 teaspoon milk
Topping:
1 cup semisweet chocolate chips
1/4 cup butter
Directions
1) Heat oven to 350 degrees. Grease 13x9 inch pan.
2) Make brownies in pan. Cool completely, about 1 hour.
3) In medium bowl, beat Filling ingredients with mixer until smooth. Spread evenly over brownie base.
4) In small microwaveable bowl, microwave Topping ingredients for 60 seconds. Stir until smooth. Cool 10 minutes, spread over filling.
5) Refrigerate until set or until serving.

Ingredients
Brownie Base
1 box brownie mix (1lb 2.3 oz)
1/4 cup water
2/3 cup vegetable oil
2 eggs
Cookie Dough
2 cups flour
1 cup brown sugar
1 cup butter, softened
2 tbsp. milk
1 tsp salt
1 tsp vanilla
1 cup chocolate chips
Directions
1) Mix brownie ingredients.
2) Bake brownie in 9x13 greased pan at 350 degrees for about 20 minutes.
3) Mix cookie dough ingredients.
4) When brownie is done, spread cookie dough on top.
5) Refrigerate until chilled.

Ingredients
Brownie Base
1 box (1 lb 2.3 oz) brownie mix
1/2 cup vegetable oil
3 tablespoons water
2 eggs
Cheesecake Layer
2 (8 oz) packages cream cheese, softened
3/4 cup sugar
2 eggs
1 teaspoon vanilla
Chocolate Chip Cookie Layer
1 pouch (1 lb 1.5 oz) chocolate chip cookie mix
2 tablespoon all-purpose flour
1/2 cup butter, softened
1 egg
Directions
1) Heat oven to 350 degrees. Grease bottom only of 13x9-inch pan.
2) In large bowl, mix Brownie Base ingredients until well blended. Spread in pan. Bake 20 minutes.
3) In large bowl, beat cream cheese with electric mixer until smooth.
4) Add sugar; beat until blended.
5) Add 2 eggs and vanilla; beat just until blended.
6) In medium bowl, stir together chocolate chip cookie mix and flour. Add softened butter and 1 egg; stir until soft dough forms.
7) Spread cheesecake layer mixture over hot brownie base.
8) Drop teaspoonfuls of chocolate chip cookie dough over cheesecake layer.
9) Bake 35-40 minutes or until cookie is golden brown.
10) Cool 1 hour. Refrigerate at least 3 hours before cutting and serving.
Fudgy Marbled Cheesecake Brownies
Ingredients
2 sticks (1 cup = 16 tablespoons) butter
1/3 cup unsweetened cocoa powder
1/2 teaspoon fine salt
1 3/4 cups all-purpose flour
4 ounces semisweet chocolate, chopped
2 1/3 cups sugar
5 eggs
12 ounces cream cheese, at room temperature
1 teaspoon vanilla
Directions
1) Preheat oven to 325 degrees F.
2) Line 9x13-inch baking pan with foil.
3) Butter the foil.
4) Whisk together the cocoa powder, salt and 1.5 cups flour.
5) Melt butter and chocolate in saucepan over medium heat, stirring frequently.
6) Transfer chocolate mixture to a bowl and let cool for 10 minutes.
7) Beat together cream cheese, vanilla, 1/3 cup sugar and 1 egg with electric mixer.
8) Add 1/4 cup flour to cream cheese mixture and beat until just combined.
9) Whisk in 2 cups of sugar and 4 eggs into cooled chocolate mixture.
10) Add flour mixture to chocolate mixture and stir to combine.
11) Chill chocolate mixture for 10 minutes.
12) Drop alternating scoopfuls of the 2 batters into pan.
13) Gently shake pan to even out the batter.
14) Make swirls with toothpick.
15) Bake brownies, about 50 minutes, rotating halfway through, until the top is set and a toothpick comes out with only a few moist crumbs.
16) Let brownies cool completely.

Ingredients:
4oz package Baker's Unsweetened Baking Chocolate Bar
3/4 cup butter or margarine
2 cups sugar
3 eggs
1 tsp vanilla
1 cup flour
Directions:
Preheat oven to 350. Line 13x9 inch pan with foil. Spray foil with cooking spray. Microwave chocolate butter in large microwaveable bowl on High 2 min. or until butter is melted. Stir until chocolate is completely melted. Stir in sugar. Blend in eggs and vanilla. Add flour and pecans; mix well. Pour into prepared pan. Bake 30-35 min.
